The crescent pie makes this casserole really special.
INGREDIENTS:
3 cups thin sliced zucchini
1/3 cup chopped onion
1/4 cup margarine
1 1/2 tbs parsley flakes
1/2 tsp salt
1/4 tsp oregano
1/4 tsp pepper
1/4 tsp garlic powder
1/4 tsp basil
2 large eggs, beaten
4 oz shredded mozzarella
1 can crescent rolls
1 tbs mustard
DIRECTIONS:
1. Preheat oven to 375.
2. Sauté zucchini and onion in margarine for 10 minutes.
2. Stir in parsley , salt, oregano, pepper, garlic and basil. Simmer 1-2 minutes.
4. In medium bowl combine eggs and cheese. Stir into zucchini mix.
5. Separate crescent rolls and line deep pie plate. Press seams together. Spread with mustard.
6. Pour zucchini mix in. Bake 375 for 18-20 minutes.
7. Cover crust with foil for the last 10 minutes.
8. Let stand for 10 minutes before serving .
