Zucchini Quiche

When the zucchini overtakes your garden and you have lots to cook, make this quiche and freeze it.

INGREDIENTS:
3 small zucchini
1/2 cup Parmesan cheese
9 large eggs
1/2 tsp oregano
5 tbs butter
1/4 cup onion, chopped
1/4 tsp salt
1 1/2 cups milk
1/2 cup Bisquick

DIRECTIONS:
1. Preheat oven to 375F.
2. Melt butter in skillet; add zucchini, onion, oregano and salt and cook until vegetables are tender (approximately 5 minutes); reserve melted butter.
3. Add eggs, milk, cheese, Bisquick, salt and remaining melted butter to blender and mix well for about 2 minutes.
4. Pour into 13-inch glass baking dish or pie plate. Spread zucchini/onion mixture over the top.
5. Bake 30-40 minutes.

Prep: 15 minutes
Cook: 50 minutes
Serves: 6
