Vegetable Chili

Chili is one of those foods which is excellent for boosting your metabolism, something which is very handy if you are trying to lose weight. It was just the thing for a cool night. An added advantage is this dish is filling, plus if you make twice as much as you need then it can easily be reheated for a quick meal. Oh So Cheap!

Sometimes the simple things in life can bring so much pleasure. On the way to the football last weekend, we made sure we took time to stop off at a fruit shop we’d often seen when passing. Since the area was unfamiliar to us, it took a while to figure how to get into the shop but once we did, it was worth it. We ended up buying fruit and vegetables at ridiculously cheap prices. Oranges were 49 cents a kilo. The cheapest they had been around here was $1.48 a kilo. I’ve been having a freshly squeezed orange house … Continue reading

Corn Bake

Since I’ve been on a bit of vegetable theme lately on this blog, I thought I’d share another one with you that is a particular favorite. Aside from tasting great, part of the attraction is once you’ve got the chopping and grating done, this is so simple it doesn’t take much time to make. Good for the busy cook. Although this recipe uses vegetables, it also includes bacon, so sorry, if you’re vegetarian you’ll have to pass on this one. In my opinion, it loses too much in taste if you omit the bacon. Sorry too, it won’t work for … Continue reading

Mixed Vegetables Au Gratin

Since I’ve been telling you what a fan I am of vegetables recently, I thought it was about time I gave you another recipe using vegetables. This one is always a winner. It will keep for 3-4 weeks. It is however, unsuitable to microwave. The other disadvantage is it not suitable for those on a dairy free diet. Mixed Vegetable Au Gratin Ingredients 8 ounces … Continue reading

Great Potatoes

Not everyone likes rice. I have a friend who doesn’t consider a meal finished unless it contains potatoes in some form. But potatoes can get boring so here are a couple different ways to use the humble spud, as we call potatoes in Australia. Indian Potatoes These are great served as part of a curry meal instead of rice and will keep people like my friend happy. HINT Make sure if you use fresh chilies, you wear disposable gloves and throw them straight out afterwards. We keep a pack of disposable gloves in the panty just for chilies. Ingredients Quarter … Continue reading

Winter Warmer- Vegetable Chili

Chili is one of those foods that speed up the metabolism. So if you’re trying to lose weight, chili is an excellent choice. It is also a warming food in winter. Lentils and beans add extra fiber. Lentils go unnoticed in this by fussy children. And once again its gluten free. Although there are a number of ingredients on this vegetable chili, it’s not hard to make and it tastes scrumptious. HINT Cook the lentils and beans the night before. I always double or triple this recipe and freeze the rest till needed. This chili will freeze well and tastes … Continue reading

Seasonal Sweet Corn Recipes

It pains me to say goodbye to summer. However, the end of the season has yielded incredible deals on fresh sweet corn. Our local market is bursting with juicy sweet corn on the cob, and the prices can’t be beat. I ended up buying way more sweet corn than I had anticipated, but it won’t go to waste. I plan to indulge in the seasonal treat in the days to come by adding the versatile ingredient to the following recipes: SWEET CORN FRITTERS Ingredients: 1/2 cups fresh sweet corn 1/4 cup milk 3 eggs 1/2 cup flour 1 teaspoon salt … Continue reading
