Low Fat Mexican Recipe

I love Mexican food.  When I am short on time and want to make something quick that everyone will love I make Mexican food for dinner.  I always feel like I did my diet in by the mere mention of nachos and tacos.  How can Mexican food with all the flour tortillas, sour cream, chips, and cheese be low fat?  Of course with a few substitutions and creativity you can have a low fat Mexican feast.  Much of the food you will use are naturally low in fat like lettuce, black beans, and tomatoes.  Never feel guilty over guacamole because … Continue reading

Pack a Healthy Lunch

Carrots, celery, and an apple.  That is what my dad has packed in his lunch since I can remember.  Since my mom can remember that has been his standard fair.  He has maintained his weight over the years.  Oatmeal or something like that for breakfast, regular lunch, and whatever he wants for dinner plus dessert.  He is healthy and in good shape.  I am certainly not saying that his choice for lunch should also be your choice.  His choice allowed him the nutrition he needed while not being heavy on meat, sugar or bread, which allowed him the freedom to … Continue reading

Health Benefits of Red Cabbage

Everything in the cart was green and for goodness sake something with a little color had to be thrown in the mix.  Before my husband dashed away with the cart, I quickly exchanged the green cabbage with red cabbage.  He looked confused but decided not to ask since he knew this turn of events had to be based in my quirkiness.  He was right.  If truth be told, he is normally right, but you won’t tell him I said that, right? Upon looking up the benefits of red cabbage, my quirkiness was vindicated.  I could now tell my husband that … Continue reading

How I Punish Myself with My Weight

For the past few years or so my sense of style and who I am slowly crept away.  As the pounds packed on my style…who I was…fell away.  I didn’t realize it at first.  The two worked together to create the perfect storm that worked against any weight loss routine I started and any self esteem I had left.  Instead of shopping for clothing I liked I began to shop for anything to cover my body.  Clothing became my way of punishing myself for being overweight.  A body 20 pounds overweight does not deserve to be in fashion, right? I … Continue reading

Relying on Self-Discipline can be Disastrous

My dog must not have realized he easily could have escaped through the open gate.  He was so used to the gate being closed that if I let him out with the gate open he would not even notice or care.  After the gate broke, he was continually exposed to an open gate and yet stayed put.  Baby steps and soon he was running out of the gate.  The constant exposure was too much temptation for him to resist one moment longer. Oreos are my open gate.  I don’t mind the children having Oreos every now and again  Why should … Continue reading

Low Fat Cheesecake Mousse {Amazing}

As a self confessed cheesecake fanatic, I am always looking for ways to include it in my life.  I came to a point where I thought perhaps carrying an extra 15 pounds or so was worth a good slice of cheesecake.  We all have our vices and cheesecake is mine.  The reason portion of my brain chastises my urges and proudly defeats the pleas to eat my weight in cheesecake.  It was the one thing I loved but felt I could not compromise on when it came to taste or texture.  Then a recipe walked into my life, put its … Continue reading

I went for a run…..a donut run.

After dropping off my oldest at school, I could no longer resist the urge. I headed for donuts. I knew I would have full support of the rest of the kids at home. I may even win mom of the year walking through the door with sprinkled donuts in hand. I have a bit more refined palette so I go for the mega deluxe cream filled donut. The breakfast of champions! Yes, I did feel kinda guilty about this whole donut run. Who needs a 20 grams of fat or more in one little sugar snack anyway? I also have … Continue reading

Stop Exercising to Lose Weight

I have mentioned this before, probably a few times, so forgive me for beating a dead horse, but I remember my husband once telling me that weight loss was not a good goal.  I thought he was crazy.  I mean what goal could be loftier than fitting into my little black dress?  I rebuffed his crazy comments and went on dancing to the oldies in the living room.  You know what?  I never lost an ounce.  I gave up.  I grew sick of the disappointment of dieting all week, exercising and seeing little results and still too much peeking out of my … Continue reading
