Healthy Mac & Cheese

Nothing says comfort food like a bowl to mac and cheese. Especially to my kids! They love the stuff but to be honest, I hate giving it to them.  In my experience it either comes processed a in box or it is filled with high fat cheese, cream, and high carb pasta.  Tell me how you can call cheese a food once it is powered?  And the high fat cream and cheese in any meal cannot be healthy.  So, I had to search out a mac and cheese recipe that was kid friendly and healthy! Healthy Mac & Cheese INGREDIENTS … Continue reading

No Bake Angle Food Dessert

When my oven broke and I was too broke to get it repaired, I had to come up with ways to bake and cook without it.  I was going to an event and needed to bring a dessert.  I hated to buy something store bought since I normally bake.  Although, I can’t say I was crying over not having the ability to bake.  Life has been too busy to breath lately much less bake.  I was lucky enough to come across this recipe in my box of dessert recipes.  I am not a fan of crushed pineapples but so many … Continue reading

Low Fat Mexican Recipe

I love Mexican food.  When I am short on time and want to make something quick that everyone will love I make Mexican food for dinner.  I always feel like I did my diet in by the mere mention of nachos and tacos.  How can Mexican food with all the flour tortillas, sour cream, chips, and cheese be low fat?  Of course with a few substitutions and creativity you can have a low fat Mexican feast.  Much of the food you will use are naturally low in fat like lettuce, black beans, and tomatoes.  Never feel guilty over guacamole because … Continue reading

Low Fat Cheesecake Mousse {Amazing}

As a self confessed cheesecake fanatic, I am always looking for ways to include it in my life.  I came to a point where I thought perhaps carrying an extra 15 pounds or so was worth a good slice of cheesecake.  We all have our vices and cheesecake is mine.  The reason portion of my brain chastises my urges and proudly defeats the pleas to eat my weight in cheesecake.  It was the one thing I loved but felt I could not compromise on when it came to taste or texture.  Then a recipe walked into my life, put its … Continue reading

Entertaining with a Diet Friendly Menu

Dinner parties often mean you have to compromise on your diet. It would appear that the menus used for most dinner parties are not diet friendly. Since we associate healthy foods with cardboard tasting diet foods we hardly want to serve that to our guests. Instead, we opt for rich creamy foods or foods with high carbs that make us have to loosen our belts by the end of dinner. However, it does not have to be that way. We can entertain while providing good food that will not compromise health or diet. Tips for Serving a Healthy Menu 1. … Continue reading

Chicken Cordon Bleu Casserole

I have to admit that my family is not big into casseroles.  How I wish this would change seeing as how they are so easy to make.  Most of the time casseroles are heavy and high in fat due to the cream base.  However, I have found a casserole that is low carb, low fat, and easy to love.  The high end French dish, Chicken Cordon Bleu, is made casserole style and even more unbelievable, it works!  Now, I did say low fat but it will give you about 6 to 10 grams of fat per serving.  Fat is not … Continue reading

Low Fat Sugar Cookies

Christmas cookies are a tradition in my family.  We spend a few days baking from sun up and until sun down.  Once we have all our cookies baked we package them up and distribute them to the neighbors.  The kids love running up and down the street placing boxes of cookies at doorsteps or handing them personally to the neighbors who are home.  As lovely as this tradition is, I have to warn it is a dieter disaster.  I think on baking days we are able to get so much done because of a constant sugar rush.  It seems that … Continue reading

Favorite Tried and True Holiday Recipes, 3

I love to make Christmas cookies. It is a family tradition to make cookies on the day we put the tree up, the day we take it down, and at the holiday dinners. Who does not love cookies and hot chocolate on a cold winter’s night? I am sure there are some lucky ones out there that don’t crave the holiday sugar but I am not one of them. In addition to all the cookies I make for my family, I also make cookies for neighbors. One of my favorite recipes is this chocolate chip recipe. The cookies taste great … Continue reading

Favorite Tried and True Holiday Recipes, 2

I cannot overstate this enough. I love mashed potatoes. The odd thing is that I am the only one in my family who does. At least I get out of peeling a lot of potatoes. I have a tendency to make mashed potatoes for Thanksgiving and for Christmas because I never have mashed potatoes any other time of the year. It breaks my heart but with all the fat in mashed potatoes I suppose it is a blessing in disguise. However, I dashed that when I found an awesome recipe for low fat mashed potatoes that do not compromise on … Continue reading
