Chicken Cordon Bleu Casserole

I have to admit that my family is not big into casseroles.  How I wish this would change seeing as how they are so easy to make.  Most of the time casseroles are heavy and high in fat due to the cream base.  However, I have found a casserole that is low carb, low fat, and easy to love.  The high end French dish, Chicken Cordon Bleu, is made casserole style and even more unbelievable, it works!  Now, I did say low fat but it will give you about 6 to 10 grams of fat per serving.  Fat is not all bad and if balanced correctly you can indulge in some cheese without blowing your diet.

Chicken Cordon Bleu Casserole

Ingredients

  • 2 lbs skinless chicken breasts, cut into bite-size chunks
  • dry breadcrumbs
  • 1/2 cup milk
  • 1 egg, mixed with the milk
  • 8 ounces swiss cheese, cubed
  • 8 ounces ham, diced
  • 1 (10 3/4 ounce) can cream of chicken soup (98% fat free)
  • 1 cup milk
Directions

1. Dip chicken in egg and milk mixture, then toss with bread crumbs, coating well.
2. Brown in a little oil until golden.
3. Place chicken in a baking dish, add cheese and ham.
4. Mix soup with 1 cup of milk and pour over all.
5. Bake at 350°F for 30-35 minutes, or until tender and bubbly.

Doesn’t that sound yummy?  If my picky family will eat it then it is worth a try. Pair it with a salad or other vegetable side.  I know it does not quite “go” but I had considered adding broccoli to the casserole.  I just can’t serve a meal without a vegetable no matter how much the kids beg.

Feel free to omit the ham.  In fact, you can vary the ingredients to come up with your own casseroles.  Just have cream soups (98% fat free), low fat milk, and nonfat sour cream on hand as a base.  Then add your meat, low fat cheese (if desired), and a vegetable.
