Easy Stir-Fry Dinner

Tonight I whipped up a yummy and easy/quick dinner. I didn’t have a recipe but I knew just what I wanted: veggies, meat, and garlic bread. From the grocery store I bought a small package of stir-fry beef which I kept in the fridge for a few days until I used it tonight.

For the vegetables, I only used two of them. I sliced up a fresh yellow onion and opened up a package of frozen sugar snap peas. Although the package told me to boil water to cook the peas, I didn’t follow the directions. Instead I heated up my wok-like skillet over medium heat, added a tablespoon of butter and another tablespoon of oil (you could use EVOO, canola, vegetable or any other) and got them heated up and ready to cook dinner.

To the oil and butter I added my frozen sugar snap peas and pushed them around until they all were coated well. I let the sugar snap peas cook for a few minutes, stirring occasionally, and then added my sliced onion. I stirred the two veggies together, then added a tablespoon or so of soy sauce, some sea salt, ground ginger, and garlic powder. I cooked the veggies together a few more minutes before adding my beef stir-fry (which I also seasoned with sea salt and garlic powder).

All 3 ingredients cooked for a few more minutes; beef doesn’t take long to cook. I added more soy sauce, then tasted a pea to make sure it was completely cooked. It was, so I placed the stir-fry onto our plates and heated some butter in the microwave. To the melted butter I added garlic powder, mixed it together and brushed the mixture onto pieces of sliced French bread.
