Apple and Thyme Chicken: A Diabetic Recipe

As most are aware November is Diabetes Awareness Month. In honor of this I want to share some diabetic recipes for you to enjoy. With one in three Americans diagnosed with diabetes you will almost be certain to know someone with this disease. Even if you do not have the disease yourself please hold on to the recipes for those you invite over for dinner. Too many diabetics have trouble eating out or eating at friends due to their inability to eat what is being served. While most diabetics have learned how to eat in these situations, I think it is high time hostesses learn to cook for those we have at our table. Besides, these recipes like the ones I will share are delicious and good for anyone!

Apple and Thyme Chicken

Ingredients:

2 whole boneless and skinless chicken breasts, about 1/2 pound each, halved and all traces of fat removed

butter-flavored cooking spray

salt (optional) and freshly ground pepper to taste

1 medium Granny Smith or other tart green apple, cored and thinly sliced

1 shallot, minced

1 tablespoon (15 ml) fresh thyme leaves or 1 teaspoon (5 ml) crushed dried thyme

1/4 cup (59 ml) balsamic vinegar

fresh thyme sprigs for garnish

Directions:

1. Preheat oven to 375°F (190° C). Rinse chicken breasts and pat dry with paper towels. Lightly spray a baking dish with cooking spray.

2. Sprinkle chicken breasts with salt (if using) and pepper. Place in a single layer in the prepared baking dish.

3. Arrange apple slices over and around chicken breasts. Sprinkle with shallot and thyme leaves; pour on the balsamic vinegar.

4. Bake for 15 to 20 minutes, until chicken is opaque throughout (cut to test). Arrange cooked breasts on a platter and spoon apples and cooking juices on top. Garnish with thyme sprigs, if desired. Serve at once.
