I cringe when I think about how much money I’ve spent over the years for pre-breaded chicken, including chicken nuggets, when breaded chicken is so easy to make at home and costs so much less than the prepared kind. Your own breaded chicken can be prepared ahead of time and placed in the refrigerator for a day or two, just like the expensive kind you will find in the refrigerated section of the supermarket, or cooked ahead and then frozen for convenience.
You can also take your savings to an even higher degree when you use your own bread crumbs to bread your chicken. I just use whatever bread may be on the verge of getting stale. Tonight I breaded our chicken with the crumbs from cheddar bread that I had left over from an Amish bakery. Cinnamon bread would be another interesting choice, too, but use whatever you have on hand. If you make your own bread, even better. Save the crumbs or the ends and freeze them. When you have enough, turn them into crumbs.
If you feel that your home made breading is a little plain, feel free to doctor it up. A little parsley or oregano plus some minced garlic and a bit of grated parmesan cheese can make a nice tasty chicken breading. When the chicken is cooked, throw on a bit of pasta sauce and a slice of provolone cheese or some shredded mozzarella and then serve it with spaghetti and a salad to make an inexpensive but yummy Italian meal.
One great source of bread that you can use for homemade breaded chicken is discounted bread. You may find loaves of bread for as little as $.50 in your grocery store clearance aisle. Also check out bakery thrift stores for specials on bread.
