Want to save those leftovers and stretch out your food budget at the same time? Try making your own sandwich spreads. it is easy and economical.
I love the idea of stretching out food and finding new ways to use leftovers. After all, it seems like food is getting more and more expensive by the month. Despite using coupons and sales, it seems like my food bill keeps going up.
In an earlier article, Freezer Soup is Free, I talked about gathering your leftovers in a freezer container to make a healthy and frugal soup. Here is another great way to use up leftovers, specifically leftover meat. Any type of meat is pretty much fair game, such as chicken, turkey, ham and even hot dogs!
Making a sandwich spread is also a great idea if you are running low on lunch supplies and need to stretch out your cold cuts until the next grocery shopping trip.
All you do is gather your meat. I usually make one spread per meat type. I don’t think that mixing them up is a good idea. Cut or tear the meat up into small pieces. Place the meat into a food processor. Now the fun begins. Add mayo or salad dressing. This will be the base of your sandwich spread. Add in any other ingredients that you might like for your spread. Some example include shredded cheese, olives, onions, dill, pickles, hard boiled eggs and celery. For chicken, you can even try grapes, walnuts and apples! Get creative. Look around and see what is on hand and to your taste. This is a good way to use up that half an onion before it grows roots and tried to plant itself.
Whirl the mixture through your food processor until it is blended well. If you want a chunkier sandwich spread, try using a blender instead of a food processor.
Keep your sand wich spread in an airtight container in the refrigerator. Spread on bread and enjoy.
