One Dish Meal—Roasted Pork

When you’re in the middle of a busy week, or when the weekend has finally arrived and you want to cook a nice meal for your family, but are dreading the dishes that will follow, one-pot meals are the answer. This isn’t a stew. It’s not a hodgepodge of ingredients either. It’s a clever, sophisticated meal you can feel proud to serve to your family and friends. And the best part—it only takes one dish.

This comforting meal combines sweet and succulent pork with savory stuffing, sweet potatoes, and sassy red onions, for a one-dish meal that’s sure to please your palate and fill your stomach.

For this recipe you’ll need:

2 medium-size sweet potatoes (approximately 1 pound), peeled and cubed

1 large red onion, cut until thin wedges

½ cup Catalina salad dressing

1 ½ teaspoons dried thyme leaves, divided

1 6-ounce package Stove Top brand stuffing mix—chicken flavor

1 ½ cups water

2 small pork tenderloins, about ¾ pound each

To make this recipe:

Preheat your oven to 375 degrees F.

In a medium to large bowl, combine the cut sweet potatoes and onions with the salad dressing and ½ teaspoon of dried thyme. Toss together then arrange in a single layer on a 15x10x1-inch baking sheet (spray with cooking spray prior to arranging the potatoes and onions). Set aside.

Combine the stuffing mix and water. Set aside.

Next, cut each tenderloin diagonally into thirds.

Push the vegetable mixture to the edges of the baking sheet, then spoon the stuffing down the center of the baking sheet. Top with the cut pork. Sprinkle the remaining 1 teaspoon of thyme over the pork. Arrange the vegetable mixture around the stuffing and pork.

Bake the meal for 40 to 50 minutes in a preheated 375 degree F. oven (until the internal temperature of the pork reaches 160 degrees F.) Serve hot.
