Oven Roast and Easy Left-Over Ideas

Roast is one of those comfort foods that most everyone enjoys. There are many ways to use a roast for a delicious and satisfying meal. Todays recipe features an oven roast. The oven roast is easy to prepare and does not require a lot of babysitting. It provides for tasty leftovers and a yummy main course.

For This Recipe You Will Need:

·1 Bottom Round Roast (Approx. 3-4 pounds)
·Salt and pepper
·1 large onion that is sliced

To Prepare This Recipe Follow These Simple Instructions:

In a roasting pan on the rack, place the beef, fat side up. Season both sides with salt and pepper; top with onion slices. Add enough water to pan to cover the bottom. Bake at 350° for 3-1/2 hours or until tender.

PREP. TIME: 5 min.

COOK TIME: 210 min.

TOTAL: 215 min.

LEFTOVER IDEAS!

First Day: Pot Roast. Place peeled carrots and halved peeled potatoes in with the roast during the last 1-1/2 hours of cooking.
Second Day: Beef Stew. Heat beef broth thickened with cornstarch and beef stew seasoning mix and chunks of beef in a pan, along with leftover potatoes and carrots. For extra thick sauce add some cream of mushroom soup!
Third Day: Beef Pot Pie. Place leftover meat chunks, gravy, peas and carrots in pie plate. Top with you favorite pie crust (even a frozen crust that you have thawed) or biscuits. Bake at 350° for 30-45 minutes or until crust is golden.
Fourth Day: Beef Nachos or Beef Burritos. Shred beef and add mild green chilies. Add beans and put in a tortilla topped with cheese for a yummy burrito. Place beef on top of your favorite tortilla chips, top with cheese, tomato, onions, black olives, refried beans and finally sour cream for yummy nachos!
