Quick and Easy Christmas Treats

My daughter’s school Christmas party is two days away and I haven’t bought a single ingredient for the dish I’m required to donate. Time has flown by this month and I’m behind of nearly all of my holiday baking. Fortunately, I have a stock of quick and easy Christmas treat recipes that can be whipped up at the last minute.

If you need to donate holiday goodies to a class party or office get-together this week, consider the following super simple recipes:

FRUIT CAKE BARS

Ingredients:

2 1/2 cups flour

1/2 cup powdered sugar

1 cup butter or margarine

1 1/3 cups sugar

1 teaspoon baking soda

1/2 teaspoon salt

4 eggs, beaten

1 cup chopped candied fruit

1 cup chopped nuts

Powdered sugar

Directions:

Preheat oven to 350 degrees.

Mix 2 cups of flour with powdered sugar. Cut in butter until crumbly. Press mixture into a 13-by-9-inch pan. Bake for 15 minutes.

In large bowl, sift remaining 1/2-cup flour with sugar, baking soda and salt. Add eggs, candied fruit and nuts. Mix well.

Spread batter over crust.

Bake 35 more minutes.

Remove from oven and cool.

Sprinkle with powdered sugar; cut into bars.

Yields 36 bars.

CHOCOLATE COVERED BUCKEYES

Ingredients for Buckeyes:

1 cup (2 sticks) butter, softened

1 1/4 cups almond butter

1 teaspoon almond extract

4 cups powdered sugar, sifted

Ingredients for Chocolate Coating:

12 ounces bittersweet chocolate, chopped

Directions:

To make Buckeyes: In large bowl, combine butter, almond butter, almond extract and powdered sugar. Mix well.

Shape dough into 1-inch balls. Place balls on parchment-lined baking sheets.

Refrigerate until firm (about 30 minutes).

To make Chocolate Coating: Melt chocolate in shallow, microwave-safe dish. Heat 30 seconds; stir; then continue heating in 10-second intervals, stirring after each cook time. Chocolate should be smooth and melted.

Remove refrigerated buckeyes and insert a toothpick about 1/2-inch into each one.

Dip buckeyes into melted chocolate leaving a small circle of dough visible at the top.

Place chocolate covered buckeyes on parchment paper to dry. Repeat with remaining candies.
