Spring Into Easter

With less than a week until Easter, many procrastinators are scrambling to get eggs, candy and festive holiday decorations together.

You don’t have a ton of time before Peter Cottontail comes hopping down the Bunny Trail; however, that doesn’t mean you should call off the holiday all together. Rather, set aside a couple of hours sometime this week to craft these simple and affordable Easter goodies that will help dress-up your holiday table:

SWEET COCONUT NESTS

Ingredients:

1/2 teaspoon water

4 drops of green food coloring (you can use yellow or orange if you want to mix things up)

1-1/4 cups sweetened coconut flakes

2/3 cup mini marshmallows

11/2 tablespoon butter

Milk chocolate eggs or jelly beans

Directions:

Combine water and food color in small bowl.

Add coconut, and then toss with fork until the coconut is evenly coated.

Microwave marshmallows and butter for 30 seconds.

Remove and stir.

Add in tinted coconut.

Line cookie sheet with wax paper.

Drop coconut mixture in 12 equal mounds on the cookie sheet.

Wet fingers and shape coconut mounds into small nests.

Allow nests to air dry until slightly hardened.

Fill nests with milk chocolate eggs or jelly beans.

A great way to use up leftover jelly beans from the nest-building project is to decorate plastic Easter eggs with them. All you need are a few eggs, some jelly beans and a hot glue gun. If you are exceptionally crafty, you can use the jelly beans to design mosaic patterns on the outside of the eggs. Begin your pattern around the center of the egg and work out, completing one row at a time. If this sounds too challenging, simply glue the jelly beans in a random pattern or consider covering the egg in one color of jelly beans and use a different color to spell out the egg recipient’s name. When you are done with the eggs you can place them in a basket and display as a festive Easter table centerpiece or use the colorful jelly bean eggs in lieu of a gold or silver egg, as the special prize during your annual Easter egg hunt.
