Meaty Monday

It’s a meaty Monday here thanks to my favorite grocery store selling chuck roast at an unbelievably low price. Whereas I usually stock up on white meat, I couldn’t resist the sale, and now I am the proud owner of a 5-pound chuck roast. In addition to the red meat that is sitting in my refrigerator I also have leftover roast pork that needs to be eaten before Ash Wednesday. Fortunately, I have devised two simple and delicious ways to prepare (and subsequently devour) said meat products. Take a look: PERFECT POT ROAST Ingredients: 1 3 to 5 lb. Chuck … Continue reading

Frozen Peppermint Cheesecake

I love peppermint and of course, my darling spouse hates it. He was only too thrilled when they started making orange and cinnamon flavored toothpaste so that he never had to endure the minty taste of peppermint again. So as much as I hate to say it, this dessert will never grace my table. On the other hand, today marks the beginning of a massive, several days long, menu planning session that will include feeding a crowd of fifty, as well as a couple of potlucks and some other gatherings that require food. So if I want a taste of … Continue reading

Baked Potato Night – Cooking With Kids

My husband is one of those rare people who don’t like potatoes. He’ll eat just about other vegetable, but except for french fries, he doesn’t eat potatoes. My kids and I love potatoes any way they are made – boiled, baked, twice-baked, mashed, or creamed. So sometimes, when we know my husband won’t be home for dinner, we plan on baked potato night. If it’s been awhile since you really oven baked a potato, not just microwaved it – let me persuade you. Bake the potato. Turn the oven on 400 or so and wait an hour. If you are … Continue reading

Cucumber and Tomato Salad

During the hot summer months, we’re always on the lookout for cooling recipes. Some foods raise the body temperature, like meat and peanuts, while others lower it, like tomatoes, watermelon, and grapes. When I found this delightful recipe, I was all over it like a fruit fly on a banana. Now, there aren’t exact amounts for this recipe – it’s all according to taste. Peel and dice several cucumbers. If you’re preparing for a large crowd, do a lot, and if there will just be a few people, do a few. (This is very scientific, you see.) Now dice several … Continue reading

Cooking for the Dog

I wish I could tell you that since this week is National Turn Off Your TV week that I had fun non-TV activities planned for every night of the week. The bad news though (and the honest answer) is that I don’t. The good news is that boys are thinking of things to do on their own. We are in the process of training our puppy, and are going through a lot of dog treats. So tonight we made homemade dog treats. The boys have wanted to do this for a while and there never seemed to be a good … Continue reading

Complete Meal: “Fake” Chicken Parmesan and Italian Veggie Bake

I am always looking for cooking shortcuts. Then again, I also look for healthy recipes when I can. The last time we went to Subway, my husband wanted the Chicken Parmesan sandwich. I noticed all they did was take the breaded chicken breasts, put hot spaghetti sauce over it, top it with shredded mozzarella cheese, and pop it in the oven for a minute. That gave me the idea to make “fake” chicken parmesan at home. I bake the Tyson Southern Chicken Strips as directed, heat spaghetti sauce in the microwave, pour some of the chicken strips, top it with … Continue reading

Cooking With Your Kids

It used to be that the art of cooking was patiently handed down from mother to daughter, but with the prevalence of boxed dinners, take-out, and pizza places the art of cooking is quickly disappearing. As a child and teenager I remember helping my mother roll out piecrust, make dough for rolls, mash potatoes, stir gravy, and of course make cookies. Many girls get married not knowing how to cook the basics, let alone something fancy like apple pie. In order to prevent this, mothers need to spend time with their children in the kitchen. The best way to teach … Continue reading
