Championship Chili

Here’s some food for thought during this weekend dedicated to whittling down the NCAA tournament field: According to a new study, scheduled vasectomies jump by 50 percent during the college basketball tournament. Apparently, some men have discovered that this weekend is a great time to recover from surgery. Doctors say men undergoing vasectomies need to rest for 24 to 48 hours with an ice pack strategically placed on their nether region post operation. If the study results are true, then thousands of men are chilling out on the couch right now glued to the NCAA tournament games, and there’s nothing … Continue reading

On the Menu in My House: Five-Alarm Chili and Super Simple Sloppy Joes

There are some people in this world who simply refuse to eat leftovers. I happen to have grown up with one and presently live with another, so I know the frustration that comes with having to make a separate dish for these picky eaters. Tonight, I planned to reheat the Five-Alarm Chili leftover from Super Bowl Sunday, but I know that move would result in discontent among the diners. (Four days is a bit long for leftovers, but I examined it and it seems fine.) So, I’m going with Plan B. I’ll eat the chili and make my Super Simple … Continue reading

Time Saving Recipes for Trick-or-Treat Night

Who has time to whip up a four-course meal on Halloween? With the doorbell constantly ringing, your kids screaming about missing costumes pieces and the dog trying to eat out of the treat bowl, most of us are lucky to get one course on the table. That’s why Halloween is the perfect night to cook up one-pot wonders such as chili. A big pot of hot and hearty chili is simple to make and can be prepared well before those mini ghosts and goblins come knocking. Another bonus with chili is that it tastes even better reheated so when your … Continue reading

Halloween Recipes: Creepy Zombie Cookies

Any other time of the year the aforementioned recipes wouldn’t sound very appetizing. But when you are creating a creepy buffet for a Halloween party or a festive pre-trick-or-treating meal then they’re the perfect additions. The first recipe for Creepy Chili is a Cheplic classic. While my mom didn’t create it (someone from Hormel Foods gets the credit) she did make when I was a kid—-only she used homemade breadsticks not the refrigerated kind. You can’t top this dish when it comes to simplicity and creativity. If you struggle to get your excited little ghosts and goblins to eat something … Continue reading

Presidential Chili

Make that Presidential Hopeful Chili. Presidential hopeful Barack Obama just wrapped up a weeklong vacation to his boyhood hometown of Honolulu, Hawaii and while he was in paradise he dined on a local favorite—-Hawaiian-style chili. Not once, but twice, according to news reports. I don’t blame the U.S. Senator from Illinois. Like Obama I was born and raised in Hawaii and it’s no secret that the Islands are home to some of the best chili in the world. (And unlike here in the Midwest fast food chains don’t yank the hearty dish from its menus during the summer months.) What … Continue reading

Aimee’s Healthy Vegetarian Chili

Beans are an amazing food — and not just because of their “magical” powers! Beans have more antioxidants than superfoods like blueberries and cranberries. They’re also full of fiber; a one cup serving can give you half of the daily recommended amount of fiber. I love beans, and here’s one of my favorite bean-laden recipes: vegetarian chili. What you’ll need: 2 15 ounce cans of black beans (they’re rich in antioxidants that fight heart disease and cancer) 2 15 ounce cans of kidney beans (they’re full of thiamin, a vitamin that protects memory) 2 15 ounce cans of garbanzo beans … Continue reading

Hearty Dips for Your New Year’s Eve Party

Thirty-two games, 64 teams… the road to the College Bowl Championship has begun at my parent’s house. With the University of Hawaii Warriors about to make history at the Sugar Bowl on New Year’s Day, my parent’s seaside home has turned into party central and their kitchen is at the center of all the action. Here in Wisconsin we’re gearing up to watch our beloved Badgers (my alma mater) take on Tennessee in the Outback Bowl on January 1st. And around the world home cooks are getting ready to ring in 2008 with their own celebrations. Whether you are hosting … Continue reading

Pantry Challenge: How Have I “Bean?”

What is a Pantry Challenge? Click here to find out. It is Sunday today. The pasta with tomato soup went over really well on Friday night. I’m going to put that recipe down as very easy to make and kid-friendly. For yesterday, there was nothing much to report. We did make breakfast from a pantry item. it was a box of Vermont organic pancake mix. I bought this mix on clearance for 50 percent off of $1.57. I used the mix to make a double batch of pancakes (leftover pancakes make great snacks, especially when you put peanut butter on … Continue reading

1,2,3 Chili

I’m currently practicing a lower-carbohydrate eating plan. You can imagine my excitement when I remembered that chili is low-carb! I created this recipe today, utilizing what was in my cabinet. I didn’t have chili powder and didn’t have a chili seasoning packet, so I had to wing it. The result was a delicious, slightly spicy chili I’ll be making again and again. I hope you enjoy it. Oh, and don’t let the long list of ingredients freak you out—it’s spices that you likely have in your own cabinet. If not, and if you have a packet of chili seasoning or … Continue reading

It’s also making my stomach churn for comfort food. Here’s a delicious recipe sure to satisfy any stomach. Try it the next time you’re entertaining, or just when you want to make something to warm your family’s stomachs and hearts. This makes enough to feed an army so cut the recipe down if you’re making it for a smaller crowd. For this recipe, in … Continue reading
