Add Spring Colors to Your Menu

I’m not much for matchy-matchy color schemes and menu planning. However, I’ve had a change of heart after trying a piece of heavenly Lemon Chiffon Cake last night. A friend of mine made the delectable dessert for her gourmet group and saved me a slice. It was beyond delicious. This cake is divine… delicately divine… with a lemon cream that melts in your mouth. Needless to say I had to have the recipe and now I plan to make it for my family’s Easter feast. Though it wasn’t planned, the cake’s yellow color and bright red raspberry garnish will only … Continue reading

Refreshing Raspberry Recipes

My daughter’s taste buds are almost as acute as her hearing (I swear she can make out the “Dora the Explorer” theme song when it’s being played in a house two blocks away) and her sense of smell, yet she can’t distinguish the taste of raspberries (which she refuses to eat by themselves) when I add them into a multi-layered recipe. As you probably know by now strawberries are not the only summer berry flying off grocery shelves these days. My local market is selling two pints of raspberries for $3 this week. I happen to love raspberries, so, naturally, … Continue reading

All About Asparagus

I just got an email from a local farm that we frequent informing me, “It’s that time of year again… Asparagus season.” I love fresh asparagus and this particular farm grows some of the best asparagus I have ever happily devoured. Each year a few weeks prior to the start of strawberry picking season the owner notifies his best customers that his asparagus crop is ready for harvest and we pre-order our supply. For those of you who don’t purchase produce directly from a farm you will soon notice that the price of fresh asparagus will be decreasing at the … Continue reading

Lemony Scones

This is a great breakfast dish to welcome in Spring. These scones have a lightly lemony taste. What’s better, is that this is a great recipe for kids to help you prepare. I always make my scones by hand–as that will typically prevent over mixing, and besides, what kid doesn’t love to mix dough by hand? The secret to great scones is all in the mixing, and the ingredients, but more in the mixing. How you mix the dough, and in what order you mix the dough, will have a great effect on the results. If you mix too much, … Continue reading

Body-for-Life Recipe: Grilled Chicken Breasts

I’ve found that the best way to stick to the Body-for-Life challenge is to make sure that I have plenty of Body-for-Life authorized foods prepared ahead of time. I usually spend a few hours on Sunday (the free day) shopping and cooking for the week ahead. I find that the time I spend preparing on the weekend really makes a difference during the week when I can just pull something quick out of the refrigerator and microwave it rather than preparing things from scratch every time I need a meal. The best food to prepare ahead of time is boneless, … Continue reading

Foods that Help Reduce Colds and the Flu

My 3-year-old daughter just came down with her first cold of the winter season. Technically, winter doesn’t officially begin until December 22nd and she had a horrible bought of the flu in early November so I’m hoping this latest round of fever, sore, throat and the sniffles is not a sign of things to come. Making matters worse is the fact that my daughter refuses to take oral medication. She will make herself throw up if a drop of medicine comes anywhere near her lips. (Any prescribed medication is administered via shots—an agonizing process to say the least.) Which means … Continue reading

Mini Lemon Tarts

Have you ever used a mini muffin tin? I got one a few years ago and have been amazed with all of the tasty treats I’ve been able to make. Making mini muffins is a great way to feed my hungry toddler without giving her a giant muffin she’ll never eat. But besides muffins, mini muffin tins are versatile. They’re great for making mini quiche, appetizers, and desserts. This recipe utilizes a mini muffin tin and a delicious combination of flavors. The result? A light yet satisfying mini tart certain to tame your sweet tooth and leave you and your … Continue reading
