Strawberry Rhubarb Pie with Oat Crumble Topping

Our CSA farm provided us with 12 ounces of rhubarb this week, so I turned it into this wonderful pie. You can serve this pie warm or cold with a scoop of ice cream or a dollop of whipped cream. It was my first time making this type of pie from scratch, and it got rave reviews. Take this basic recipe and make it your own. Ingredients Pie: 1 unbaked 9-inch pie shell. Use your favorite recipe or a prepared refrigerated one from the store. 12 ounces rhubarb stalks 12 ounces frozen strawberries slightly thawed and sliced 1/3 cup water … Continue reading

Tangy Lemon Meringue Pie

Ever since I discovered the gluten free frozen pastry, I’ve been finding it a great help in the kitchen. Thanks to friends I have a lovely supply of fresh lemons at present. Our lemon tree is still in its early stages of producing, so the most we get is a couple. Last night when we were having guests for dinner I made lemon meringue pie which is my husband’s favorite dessert. HINT I’ve already given you one recipe for lemon meringue pie but this one could be even nicer. It is very tangy, which I love. The sweetness of the … Continue reading

Another “Fish Friday” is upon us, and if you are tired of sipping calm chowder, heating up frozen fish sticks, or eating breakfast for dinner in an effort to make meatless meals more palatable, then you might find the following recipes helpful. The Baked Tilapia and Seafood Stuffed Haddock are not only easy to make, but they may just make Friday night dinners during Lent something to look forward to, rather than dread. SIMPLE BAKED TILAPIA Ingredients: 2 Tilapia fillets (you could also substitute with red snapper, haddock, halibut, or orange roughy) 1 fresh lime 2 tablespoons olive oil 1/4 … Continue reading

Cool Thanksgiving Pies

Growing up in a small town on the Big Island of Hawaii, Thanksgiving dessert consisted of traditional fruit pies and little more. Which is not to say that I don’t love fresh fruit pies, but when I moved to the “mainland” in the late 1980s to attend college I was introduced to a whole new Thanksgiving dessert option: Ice cream pie. To this day I make sure that at least one frozen (or refrigerated) pie is featured on our Thanksgiving buffet. Decadent chilled pies are much cheaper to make than to buy. What’s more, they offer guests a chocolaty option … Continue reading

Delicious Lemon Coconut Dessert

Necessity is the mother of invention so they say. Also of good recipes. This is another delicious coconut pie which came about because I didn’t have a tin of pineapple one time when I wanted to make it. Rather than rush up to the local store, which would have cost me more as they are expensive I opted to adapt. Yes, I know, if I’d planned ahead it wouldn’t have happened. But hey, we won’t go there. And tinned pineapple is usually a staple in my pantry. Anyway the result was an even more delicious dessert. Wheat and Gluten Free … Continue reading

Your Favorite Holiday Pie

When the desert comes out around the holiday dinner table do you have to be quick to make sure that you get a piece of your favorite pie? Throwing a napkin in someone’s face can help you win that slice, although I admit, the practice isn’t very nice (worse still if it is a used napkin). Usually, we wind up with too much of a certain type of pie and not enough of another. So, you may just want to have an informal survey of your relatives and friends to see exactly how much and which types of pies to … Continue reading

Not Your Mama’s Thanksgiving Recipes

Back in my previous life as a TV journalist, I had the opportunity to cook with local “celebrity” chefs when they appeared on our morning show. I actually did more eating than cooking, but I learned some culinary tricks just the same. The holidays always included a steady stream of cooking segments featuring proud pro chefs whipping up unique dishes. The following is a sample of some of the recipes I saved from those segments. They’re nothing like my mom served us on Turkey Day, but boy were they popular with our studio crew. THANKSGIVING GRAVY Ingredients: 1 can cream … Continue reading

Crazy for Cranberries

Do you remember the last time you ate fresh cranberries? Most people only consume the plump tart fruit on Thanksgiving, and even then, the vast majority of diners are not eating the real deal. Folks, that gelatinous cranberry colored blob that you plop out of a can during the holidays doesn’t do justice to the real fruit. Believe it or not there are a myriad of recipes out there that feature fresh cranberries in their righteous glory. This year consider banning over processed store-bought cranberry-ish blobs from your table, and instead, consider making these delicious fresh cranberry dishes: CRANBERRY CHERRY … Continue reading

No Fuss Pumpkin Pie

If you have (or have had) a picky little eater in your family then you know the sheer delight that overcomes you when he or she finds a new favorite food. Two years ago I worked a miracle and got my picky eater (she’s not very picky anymore) to try a bite of pumpkin pie. Two bites later and my toddler was pumping her fists proclaiming her love for the spicy dessert. It was a Hallelujah moment and I immediately went online to hunt down every pumpkin pie recipe known to man. I spent months experimenting with pumpkin pie recipes, … Continue reading
