Veggie Enchilada Recipe for Playgroup

It is that time again – playgroup at our house. I will have 8 – 10 little toddlers running around the house. I love hosting playgroup, but I am never quite sure what to serve as a main dish. My little sweetie (who, by the way, refused to eat the vegetable muffins I blogged about earlier) thinks of yogurt as a main dish, but I want to serve something everyone will enjoy. I still have not decided what to serve, but I am thinking about this scrumptious recipe:

Veggie Enchiladas

Maybe our kids are different, but they seem to love Mexican food. This recipe is great for getting some veggies in to those little stomachs.

For this recipes, you will need dry lentils, olive oil, carrots, chili powder, one zucchini, one tomato, shredded cheddar cheese, and 8 – 10 flour tortillas.

Preheat your oven to 350 degrees. Slice the carrots and zucchini into thin slices and chop the tomato into small pieces. Grease a cooking dish (use one that has a lid – 11×7 works great, but you can use 9 x 13). In a medium saucepan, combine 1 1/3 cups of water with 1/2 cup of dry lentils. Bring that to a boil then reduce the heat to low. After about 20 minutes, the lentils should be tender, so drain them. Add 1 tablespoon of olive oil to a large skillet and put over medium heat. Add 1 cup of sliced carrots and 1 teaspoon of chili powder. Cook for about 3 minutes then add 2 cups of sliced zucchini. Cook until the vegetables are tender (about 3 more minutes). Remove the skillet from the heat and stir in the lentils, 1 cup of chopped tomatoes, and 3/4 cup of shredded cheddar cheese. Spoon that mixture in the center of each tortilla, spread, the roll up the tortilla. When you have finished all your tortillas, place them seam side down on the cooking dish and cover with the lid. Bake for 8 minutes then uncover. Bake for 8 more minutes then spoon 2/3 cup of shredded cheddar cheese over the top and return to the oven until that is melted.

You can serve this with salsa, but unless the kids are older than ours are (2 years of age), I wouldn’t put it directly on the enchiladas.
