What to Do With Your Leftover Turkey

Yesterday morning I had to clean out my refrigerator. I needed to make room not only for the turkey and other items I bought, but for the food that family will bring on Thanksgiving.

I also went grocery shopping for all of the things that I need (at least I hope I remembered everything). But when I shopped, I also picked up some extra ingredients for the day after Thanksgiving.

What to do with those turkey leftovers? Turkey sandwiches are always yummy. But I have a favorite recipe that is perfect for the colder weather. It is Turkey Rice Soup.

You will need:

16 cups chicken broth (I use bouillon cubes)

turkey bones with the scraps of meat still on them

4 stalks celery, diced

1 cup carrots, diced

1 cup cooked rice

4 potatoes, diced

several sprigs of fresh parsley

salt & pepper (to taste)

Fill a large pot with the chicken broth and bring it to a boil. Add the bones and simmer for 1 hour. Remove the bones, leaving the meat and broth in the pot. Add the rest of the ingredients and simmer for at least 30 minutes.

The day after Thanksgiving is when I set up for Christmas. There is nothing like the smell of this soup on the stove while I am putting up the decorations and tree.

You can make all sorts of delicious meals with your leftover turkey…turkey pot pie, turkey tetrazzini, turkey salad. You may even come up with your own special recipe.

Take advantage of the day after Thanksgiving to turn those leftovers into another meal. It is a great way to keep the refrigerator cleaned out. It won’t be long and you will be filling it again, with food to celebrate Christmas.
