Cheap Eats–The Perfect Potato

Here are a three of my favorite potato side dish recipes! Potatoes are an excellent food because they are versatile and inexpensive. For the best deal, buy them on sale for a dollar in a 5 or 10 pound bag. Here are a few new ideas to make great potato side dishes for pennies.

Broiled Potatoes with Cheese

This is one of my favorite potato recipes because it is so simple and fast. I use it often when I need a last-minute side. The original recipe contains parmesan cheese, but I’ve substituted cheddar because it is a lot cheaper and my husband likes it better anyway.

Scrub 2 potatoes and cut them into 1/4 inch slices. Arrange them in a single layer on a broiler pan. Brush with melted butter or margarine seasoned with garlic powder, paprika, and pepper. Broil for about 8 minute. Flip potatoes over and sprinkle with shredded cheddar cheese. Broil an additional 4-6 minutes, or until golden brown and cooked through. Serves 3-4.

Cajun Oven Fries

If you like spice, you’ll love these fries. If you’d like to tame down the spice, substitute some of the hot pepper sauce for more olive oil. The only thing I did differently from the original recipe was I used regular Russett potatoes, to keep costs down.

4 medium potatoes

3-4 Tbsps extra-virgin olive oil

2 T cayenne pepper sauce (like Tobasco)

1 tsp ground thyme or poultry seasoning

1 tsp ground cumin

1 tsp paprika

Course salt and black pepper

Preheat oven to 450 degrees. Cut potatoes into wedges. In a large bowl, combine oil, hot sauce, thyme, paprika, and cumin. Toss potatoes in dressing and spread out in a single layer on a cookie sheet. Season with salt and pepper. Bake for 20 minutes, turning once.

Garlic Cheese Mashed Potatoes
Unlike regular mashed potatoes, these spuds have enough flavor to be eaten without gravy.

Make regular mashed potatoes and add crushed garlic and shredded cheddar cheese, parsley, butter, salt and pepper to taste. Super easy to make, and no recipe needed!
